A family resemblance beyond looks

Earlier in the day, my sisters and I were having some lighthearted banter about who my newly born nephew looks like. It’s honestly too early to tell — babies change so fast — but they were convinced he looks like my dad.

“You’ll spoil him,” they teased, clearly implying that if he looks like Dad, he’s getting VIP treatment from me. They’re probably right.

People have told me for years that I behave and think like my father. Apparently, I even resemble his siblings. But today, something else sealed the deal — something unexpected, and very me: food.

One thing my dad was known for was his unusual food combinations. Not weird in a bad way, just not the kind of pairings you’d typically see in our community. But that didn’t stop him. If he had the opportunity to mix things up, he would — happily.

Well, today confirmed all of it. I whipped up something that would have made him proud — a combo that some might raise eyebrows at: fried eggs with vegetable soup made from kale. Yep, I went there.

Nutritionally, it’s actually a great pairing. You’ve got protein from the eggs and antioxidants from the kale — a little powerhouse meal.
